Destil\u00e1t si zachov\u00e1v\u00e1 svou charakteristickou ovocnou v\u016fni po \u0161vestk\u00e1ch a tato v\u016fn\u011b je jedn\u00edm z ukazatel\u016f, kter\u00fdmi se spot\u0159ebitel orientuje.  Na v\u00fdrobu slivovice se pou\u017e\u00edv\u00e1 p\u0159i tradi\u010dn\u00edm p\u00e1len\u00ed kvas z vyzr\u00e1l\u00e9ho kvalitn\u00edho ovoce bez stopek, shnil\u00fdch kus\u016f ovoce a preferovan\u00fd je destil\u00e1t z vypeckovan\u00fdch \u0161vestek. Kvas zraje minim\u00e1ln\u011b 6-8 t\u00fddn\u016f. Doba kva\u0161en\u00ed je z\u00e1visl\u00e1 na cukernatosti plod\u016f a na teplot\u011b v m\u00edst\u011b, kde sud s kvasem zraje. Cukernatost se snadno zm\u011b\u0159\u00ed. Podle obsahu zkvasiteln\u00e9 su\u0161iny lze odhadnout obsah alkoholu po vyp\u00e1len\u00ed v p\u00e1lenici, kde se kvas p\u00e1l\u00ed p\u0159i teplot\u011b 88\u00b0C. N\u011bkte\u0159\u00ed v\u00fdrobci dobarvuj\u00ed destil\u00e1t kul\u00e9rem nebo potravin\u00e1\u0159sk\u00fdm barvivem, co\u017e sni\u017euje kvalitu n\u00e1poje a znalci to bezpe\u010dn\u011b poznaj\u00ed. Zaj\u00edmavost\u00ed je, \u017ee p\u0159esto\u017ee m\u00e1me slivovici jako \u010deskou specialitu, pravd\u011bpodobn\u011b n\u00e1m ji p\u0159ivezli Bulha\u0159i z Balk\u00e1nu, kdy\u017e doos\u00eddlovali Vala\u0161sko.
